Our little Charlie Peaches & Yoghurt Honey Mousse with Peaches

I usually try and keep the blog strictly food business but I thought I would share something a little more personal with our readers as this is probably one of the biggest moments in my life. On 31st January I gave birth to our beautiful daughter Charlotte Peaches. Our little “Charlie” was born at 10:54am and is a very sweet little girl. We have have been home for almost 2 weeks now and are loving every minute of it, she is pretty amazing and Thom and I are as proud as punch.

And in tribute to our little Peachie, we made this recipe of Yoghurt Honey Mousse with beautiful white peaches to celebrate. It is a creamy and fluffy mousse with a lovely tang from the greek yoghurt and rounded sweetness from the honey. Not too sweet and a little bit more healthy than your standard mousse. It would also go really well with middle eastern style flavours such as pistachios, rosewater syrup and persian fairy floss.

Yoghurt Honey Mousse with Peaches

2 tsp powdered gelatine
2 tbsp room temperature water
125ml (1/2 cup) thickened cream
400g (1 1/2 cups) full fat greek yoghurt
125ml (1/2 cup) honey
2 eggs, separated
1 tsp vanilla extract
3 white peaches

Put gelatine in a small saucepan with the water and leave to soften for 5 minutes.
Beat cream until soft peaks form and set aside. Whisk yoghurt, egg yolks and honey together until combined. Fold cream through the yoghurt mixture.

Heat gelatine mixture on stove for 1-2 minutes: do not let it boil.

Beat egg whites in a clean, dry bowl with electric beaters until soft peaks form. Gently fold egg whites through the yoghurt mixture until just combined. Add vanilla and 1 tbsp yoghurt mixture to gelatine and then fold through your mousse mixture.

Pour into 6 metal or ceramic moulds, cover with plastic wrap, place on tray and put in the fridge for 4 hours or until set.

To serve, run a knife around the inside of the moulds. Place the moulds in hot water for 5-10 seconds and invert onto your serving plate. You may need to give them a gentle tap and if you are having trouble getting them out, just put back in the water for a few more seconds. You can also use wine glasses if you want to serve the mousse in the glass without unmoulding it. Decorate with sliced peaches and serve immediately.
